Ceylon Cinnamon

Ceylon Cinnamon, also known as True Cinnamon, is the finest cinnamon across the Seven Seas. Derived from the plant Cinnamomum zeylancium, it is only native to Sri Lanka.

The quality and the flavour of Ceylon Cinnamon have attracted many countries and cultures making Sri Lanka the largest True Cinnamon exporter in the world and the Ceylon Cinnamon industry is mainly governed by small and medium holders and regional plantation companies.

Peeling and processing Ceylon Cinnamon sticks is a method unique to Sri Lanka. The bark is gently peeled away by hand using only indigenous tools that were used for many centuries. Peeling takes place just when the bark is turning brown, and the peeled outer bark is then dried and rolled into long cigar-like sticks which are cut into shorter quills using a sharp knife.

Unique Terroir

Western coastal areas in Sri Lanka are the home to premium quality Ceylon Cinnamon. The soil conditions like silver sands in Negombo are the most suitable for Cinnamon growth. Rainfall of 1,750 – 3,000mm per year and temperatures between 25˚C- 32˚C will produce the finest Cinnamon.
