Ceylon Cinnamon Quills
Ceylon Cinnamon Quills are cigar-like sticks made from the inner bark of the Ceylon Cinnamon or True Cinnamon Tree (Cinnamomum zeylanicum), a plant native to Sri Lanka.
Hand rolled by cinnamon peelers into metre-long quills like a giant cigar, Ceylon Cinnamon Quiils has a delicate structure, a sweet flavour and fragrance, and over 250 times less Courmarin.
Cinnamon Quill Varieties

Alba
Alba cinnamon is of the highest quality and has the best flavour of all Ceylon Cinnamon. It is made from the finest and thinnest inner bark of the Ceylon cinnamon tree.

C5 Special
Continental Ceylon Cinnamon is the second-best quality after Alba. It is tan, and yellow in colour, smooth texture, distinctive and sweet flavour. C5 Special is one of the highest-quality Ceylon Cinnamon grades. Its quill diameter is 10-12 mm. C5 carries a golden/yellow hue, and a sweet flavour and scent.

C5
C5 cinnamon quills are slightly smaller than the C4 variety, with a diameter ranging from 10-12 mm. They exhibit a rich, reddish-brown colour, adding an attractive touch to any culinary creation. The flavour and aroma of C5 cinnamon are exquisite, boasting a delightful blend of sweetness and warmth that is sure to enhance a wide variety of dishes.

C4
C4 cinnamon quills are 13-15 mm in diameter, golden yellow, and have a pleasant flavour and aroma. C4 cinnamon is relatively inexpensive compared to other cinnamon stick grades.

M4
Coarser in texture, brown in hue, and powerful and spicy in aroma, Mexican or M-grade Ceylon Cinnamon is less subtle in flavour, when compared to Alba and C grades of Ceylon cinnamon. The M4 grade is very similar to the M5 Cinnamon grade. The sticks are light brown and are approximately 18–20 inches in diameter.

M5
M5 sticks are golden brown with slightly reddish patches on the surface of the quills. They are thinner and rougher in texture.

H1
Hamburg cinnamon is brown and usually features dark brown patches on the skin as they are produced from more mature cinnamon bushes, which makes it the thickest, least delicate variety of Ceylon Cinnamon. The best cinnamon of Hamburg grade with the lowest quill diameter of 23 mm in the grade, H1 has a pale brown hue, distinct flavour, a stronger scent, and a quite coarse texture.

H2
H2 shows very similar attributes to the H1 Cinnamon grade with a 90% availability of golden yellow and good-quality cinnamon sticks.
